A bakery built on family recipes and a dance studio housed in a converted warehouse are opening within two blocks of each other on Washington Street, adding new foot traffic to a stretch of Norwalk that has seen five business openings in the past 18 months.
Crumb & Kettle Bakery will open at 142 Washington St. on Saturday, Oct. 14, while Pulse Dance Collective begins classes at 189 Washington St. on Monday, Oct. 23. The owners of both businesses are Norwalk residents who say they chose the locations for their walkability and proximity to the South Norwalk train station.
Crumb & Kettle Bakery
Owner Maya Torres, a Norwalk native who trained at the Culinary Institute of America, is bringing a menu rooted in her grandmother's Puerto Rican baking traditions to Crumb & Kettle. The 1,200-square-foot shop will open at 7 a.m. daily.
Signature items include:
- Coquito tres leches cake — $8 a slice, $42 whole
- Sourdough pan de agua made with stone-ground flour from Four Star Farms in Northfield, Mass. — $7.50 a loaf
- Flan de queso — $6 a slice
Torres said she sources butter from Arethusa Farm Dairy in Bantam, Conn., and plans to add savory lunch items, including empanadas and a rotating soup, by November.
"Growing up, my abuela baked every Sunday after church," Torres said. "I wanted a space where that kind of ritual still matters—where someone can come in for a loaf of bread and stay for a conversation."
The bakery will seat 16 and offer pre-orders for holiday orders starting Nov. 1. Hours will be Tuesday through Sunday, 7 a.m. to 4 p.m.; closed Mondays.
Pulse Dance Collective
Three blocks east, Pulse Dance Collective is launching with 18 weekly classes across three studios in a former textile warehouse. Owner Derek Okonkwo, a choreographer who has toured with three major-label R&B acts, said he designed the space to accommodate both recreational dancers and those training competitively.
The 6,000-square-foot facility includes:
- A 2,000-square-foot main studio with a Meyer Sound system
- Two smaller studios for private lessons and small-group instruction
- Locker rooms with showers

Okonkwo, who moved to Norwalk in 2019, said he struggled to find advanced training options in lower Fairfield County without commuting to New York City.
"I kept meeting dancers here who wanted rigor but also wanted to sleep in their own beds," he said. "We're building that middle ground."
What the Openings Mean for the Neighborhood
The two arrivals extend a recent streak of commercial growth on Washington Street. Since spring 2022, the corridor has added a independent bookstore, a specialty coffee roaster, a Pilates studio, and two restaurants, according to Norwalk Economic Development Director Jessica Laird.
"Small-business openings in walkable districts have outpaced our suburban corridors by about two to one over the past three years," Laird said. "These kinds of investments—by local owners, in existing buildings—are exactly what we're trying to encourage."
Both Crumb & Kettle and Pulse signed leases in buildings owned by Washington Street Properties, a local firm that has renovated four commercial properties in South Norwalk since 2020.
